A Muffin Is Born!

Hello everyone!

My name is Mandi and I've taken to baking muffins. A LOT of muffins. I like to have one before I go to the gym in the morning and one after my workout, so I'm always on the lookout for super duper healthful muffin recipes or recipes that I can adapt to make as healthful as possible.

I like to experiment with alternative flours. I try to achieve as high of a fibre rating as possible in each recipe. I also like to add one healthful fat (mono unsaturated fatty acid) to each recipe when possible.

I'm going to post my muffin experimentation, research and results here and I'll rate the muffins and provide recipes and nutritional information.

Basic rules of making muffins:
Unless otherwise stated, the method for making muffin batter is to mix the dry ingredients and moist ingredients separately; add then to combine both mixtures. DO NOT OVER MIX.
